  • 1 pint oysters Hoods Canals best, smalls or 8 small oysters in shell, schucked.
  • 1/4 cup butter
  • 1/4 cup flour
  • 1 cup milk
  • 1 egg yolk
  • 1/2 tablespoon chopped parsley
  • 1/2 teaspoon salt
  • Pinch of cayenne
  • 1 teaspoon lemon juice
  • Cracker crumbs as needed, potato chips, or seasoned bread crumbs
  • Salt and Pepper to taste
  • Butter for oyster shells
  • 4 T melted butter
  • 1/2 C shredded parmesan


Clean, shuck and drain oysters. Mix 1/2 of melted butter, flour and milk with a whisk. Add egg yolk, seasonings and then stir. Place a teaspoon of butter into each shell and fill them with mixture. Sprinkle with seasoned cracker crumbs, potato chips, seasoned bread crumbs. Sprinkle the top of each oyster with equal amounts of Parmesan. Bake at 375* in the oven from 8-10 minutes or until bread crumbs are golden brown. (Deep oyster shells may be used.)

Yield: 8-12 0ysters
