Ingredients:
- 4 (6-7 oz) Alaskan King Salmon filets, skin removed
- 3 T olive oil
- 1/2 t salt, divided
- 3/4 t white pepper
- 1 Granny Smith apple, peeled, cored and cut into small dice
- 2 T brown sugar
- 1/4 C apple cider
- 1/2 C heavy cream
- 4 oz cold butter, split into 2 pieces
Method:
Preheat your oven to 375 degrees. Grease a baking sheet with oil. Season both sides of the salmon filets with salt and pepper and place onto your baking sheet. Place the salmon in the center of the oven and roast for approxiametly 10 minutes, depending on the thickness of your salmon filets, just until about medium in temperature. Meanwhile in a medium sized saute pan over medium high to high heat, add oil, then combine the diced apples, sugar, and cider. Cook for about 6-7 minutes or until apples are translucent. Add the cream and cook until all the liquid reduces by half, about 3 minutes. Add the butter a few pieces at a time, whisk constantly to blend, and removing the sauce from the heat periodically to keep the sauce from breaking. Add the remaining salt and white pepper, whisk to blend. Serve hot over the salmon. Serve immediately.Servings: 4
