- (4) 7 oz. fresh halibut filets, rinsed
- 2 C unsalted peanuts, ground fine
- 1 C wasabi powder
- olive oil
- salt and white pepper
- 1 C mayonaise
- 2 T wasabi powder or to taste
After rinsing the halibut, mid the dry ingredients, then dredge each filet in the seasoned, ground peanuts, and wasabi powder mixture , coating both sides of the halibut filet. In a large saute pan over medium high heat, add enough olive oil to cover about 1/4 of an inch of the saute’ pan, and heat over medium-high heat. Just before the oil starts to smoke add the halibut, browning on both sides, approxiametly 1 minute per side. Finish off in a preheated 425 degrees oven, cooking until desired temperature is achieved (medium). Serve with wasabi aioli piped as a garnish on the top of each filet.
