Ingredients:
- 5 C left over mashed potatoes
- 1 1/4 C chopped onions, green
- 10 slices smoked bacon, diced and rendered
- 3 eggs beaten
- 2 T salt
- 2 T pepper
- 2 T flour
- 2 T heavy cream
Method:
In a large bowl mix all the ingredients, form in a circular 3 inch mold. In a large saute pan place the olive oil in and saute for 2-3 minutes a side until golden brown. Hold in preheated 165* oven if needed.Servings: 20 cakes
