Shrimp Frittata



  • 1 lb. shrimp meat
  • 4 T butter
  • 2 clove garlic, crushed
  • 1 C chopped sweet onion
  • 1 1/2 C chopped broccoli
  • 3/4 C chopped red bell peppers
  • 2 T salt
  • 2 T black pepper
  • 6 eggs
  • 1 C heavy whipping cream
  • 1 1/2 C grated Parmesan cheese


Melt butter in large skillet, over medium-high heat. Add garlic, onion, broccoli and bell peppers. Saute until tender. Add salt and pepper. Cover and cook approximately 7 minutes.
Beat eggs, heavy cream, and cheese together. Combine shrimp, vegetable mixture and egg mixture in buttered 1 quart shallow casserole or skillet. Bake at 350 degrees for 20 minutes or until firm. Garnish with parsley.

Yield: 4 servings
